Turmeric Roasted Chickpeas Recipe
Turmeric roasted chickpeas are a crunchy, protein-packed side dish inspired by Middle Eastern spiced legume preparations. Roasted until crispy with warming turmeric, cumin, and garlic, they double as a snack or a topping for salads and grain bowls. Each serving packs 11g of plant-based protein and 12g of fiber in just 185 calories, making these an excellent high-protein vegan side.
Ingredients
- 2 cans (800g total) chickpeas, drained and rinsed
- 2 tbsp olive oil
- 1.5 tsp turmeric
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp coriander
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
- Fresh lemon juice, for serving
- Fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 220°C (425°F). Line a large baking sheet with parchment paper.
- Drain and rinse chickpeas, then spread on a clean kitchen towel. Pat and roll dry very thoroughly. Remove any loose skins that come off.
- Spread dried chickpeas on the baking sheet in a single layer.
- Roast for 20 minutes, shaking the pan once halfway through, to dry out the chickpeas.
- Remove from oven. In a large bowl, whisk together olive oil, turmeric, cumin, smoked paprika, coriander, garlic powder, salt, pepper, and cayenne.
- Add the pre-roasted chickpeas to the spice oil mixture and toss well to coat every chickpea.
- Return to the baking sheet and spread in a single layer.
- Roast for another 15-20 minutes, shaking the pan every 5 minutes, until chickpeas are deeply golden and crispy.
- Remove from oven and let cool on the baking sheet for 5 minutes. They will continue to crisp up as they cool.
- Transfer to a serving bowl, squeeze with fresh lemon juice, and garnish with fresh parsley.
Tips & Variations
- The two-stage roasting method (dry roasting first, then spice-coating and finishing) is key to achieving maximum crunch.
- Make sure chickpeas are bone dry before roasting. Any moisture will cause steaming instead of crisping.
- They are crispiest straight from the oven. They soften as they cool, so store uncovered at room temperature to maintain some crunch.
- Use as a salad topping, grain bowl add-on, or soup crouton substitute.
- For a sweeter variation, add 1 tsp cinnamon and 2 tsp honey to the spice mix for a Moroccan-inspired version.

Frequently Asked Questions
How do you make roasted chickpeas crispy?
Three steps matter most: thoroughly dry the chickpeas before roasting, use high heat (425°F), and let them cool on the pan. Moisture is the enemy of crispiness.
Are roasted chickpeas a good source of protein?
Yes. Chickpeas contain about 8-12g of protein per 100g cooked. A serving of these roasted chickpeas provides 11g of plant-based protein, making them an excellent vegan protein source.
How long do roasted chickpeas stay crispy?
They are best the day they are made. Store at room temperature in an open bowl or loosely covered container for up to 2 days. Avoid airtight containers as trapped moisture will soften them.
Can I use dried chickpeas instead of canned?
Yes. Soak overnight, then cook until tender. Use about 400g cooked chickpeas. Make sure they are completely dry before roasting.
