The Full English Breakfast is a British classic, and this healthy remake keeps all the satisfaction while cutting unnecessary calories and fat. By using turkey sausages, baked tomatoes, sauteed mushrooms, and steamed spinach alongside fried eggs and lean back bacon, this gluten-free, high-protein version delivers 52g of protein without the greasy sluggishness of a traditional fry-up. Perfect for a weekend morning that fuels an active day.

Ingredients

  • 4 large eggs
  • 4 turkey sausages (or chicken sausages)
  • 4 rashers lean back bacon (or turkey bacon)
  • 2 large tomatoes, halved
  • 200g chestnut mushrooms, halved
  • 100g baby spinach
  • 1 can (200g) baked beans (low-sugar variety)
  • 1 tbsp olive oil
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 200C (400F). Place tomato halves cut-side up on a baking tray. Drizzle with olive oil, season with salt, pepper, and thyme. Roast for 15-20 minutes until softened and slightly caramelized.
  2. While tomatoes roast, cook turkey sausages in a non-stick skillet over medium heat for 10-12 minutes, turning every 3 minutes until browned and cooked through (internal temp 74C/165F).
  3. Move sausages to the side. Add bacon rashers to the same pan. Cook for 2 minutes per side until crispy.
  4. Remove sausages and bacon and keep warm in the oven at low heat (90C/200F).
  5. Add mushrooms to the pan. Cook over medium-high heat for 4-5 minutes until browned and moisture has evaporated. Season with salt and pepper.
  6. Add spinach to the pan and cook for 1-2 minutes until wilted. Remove and keep warm.
  7. Warm baked beans in a small saucepan over low heat, stirring occasionally, for 3 minutes.
  8. In the same skillet, fry eggs over medium heat in a small amount of olive oil for 3 minutes until whites are set.
  9. Arrange everything on warmed plates: 2 eggs, 2 sausages, 2 bacon rashers, roasted tomato halves, mushrooms, spinach, and baked beans.

Tips & Variations

  • Batch cook the sausages and bacon on Sunday and refrigerate. During the week, just reheat and fry fresh eggs for a 10-minute weekday version.
  • For a true full English without the gluten issue, serve with gluten-free toast or skip the bread entirely.
  • Swap baked beans for butter beans tossed in a pinch of smoked paprika and olive oil for a lower-sugar option.
  • Add a piece of black pudding (blood sausage) for an authentic touch. Check labels for gluten content.
  • For extra protein, serve with a side of smoked salmon or add a third egg.

Frequently Asked Questions

What makes this a healthy full English?

Swapping pork sausages for turkey sausages, using back bacon instead of streaky bacon, adding spinach, and baking tomatoes instead of frying them reduces saturated fat by about 60% while keeping protein high.

Is a full English breakfast gluten-free?

This recipe is naturally gluten-free if you use gluten-free sausages (some contain rusk/breadcrumbs) and omit toast. Always check sausage and baked bean labels.

Can I meal prep parts of the full English?

Yes. Cook sausages and bacon in advance and refrigerate for up to 4 days. Reheat in the oven at 175C (350F) for 10 minutes. Mushrooms can also be cooked ahead. Fry eggs fresh.

How many calories is a traditional full English?

A traditional full English with pork sausages, streaky bacon, fried bread, and butter typically has 900-596 calories. This remake is under 550 calories with higher protein.

What is back bacon vs streaky bacon?

Back bacon comes from the loin of the pig and has much less fat than streaky bacon (belly). It is the traditional British bacon used in a full English and is significantly leaner.
