Indian Lentil Dal Lunch Bowl is a deeply satisfying, plant-powered meal built around masoor dal (red lentils) simmered with aromatic spices and finished with a sizzling tarka of cumin, garlic, and dried chili. Served over basmati rice with cucumber raita and fresh coriander, this vegan, gluten-free bowl delivers 23g of plant-based protein and an impressive 12g of fiber per serving. It is a nutritional powerhouse and one of the most economical high-protein meals you can prepare.

Ingredients

Dal

  • 1 cup red lentils (masoor dal), rinsed
  • 1 can (400ml) diced tomatoes
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp garam masala
  • 1/4 tsp cayenne pepper (adjust to taste)
  • 500ml water or vegetable broth
  • Salt to taste
  • 2 tbsp coconut oil

Tarka (Tempering)

  • 1 tbsp coconut oil
  • 1 tsp cumin seeds
  • 3 cloves garlic, thinly sliced
  • 2 dried red chilis

Bowl

  • 2 cups cooked basmati rice
  • 1 small cucumber, diced
  • 1/2 cup plant-based yogurt (or regular yogurt for non-vegan)
  • 1/4 cup fresh cilantro, chopped
  • 1 lemon, cut into wedges

Instructions

  1. Heat 2 tbsp coconut oil in a large pot over medium heat. Add diced onion and cook for 5 minutes until golden.
  2. Add minced garlic and ginger. Cook for 2 minutes until fragrant.
  3. Add turmeric, cumin, coriander, and cayenne. Cook spices for 1 minute, stirring constantly.
  4. Add diced tomatoes and cook for 3 minutes until tomatoes slightly break down.
  5. Add rinsed lentils and water or broth. Bring to a boil.
  6. Reduce heat to medium-low. Simmer for 20-25 minutes, stirring occasionally, until lentils are completely soft and have broken down into a thick, creamy consistency.
  7. Stir in garam masala. Season with salt. Add more water if dal is too thick.
  8. Make the tarka: heat 1 tbsp coconut oil in a small pan over high heat. Add cumin seeds. When they start to pop (about 30 seconds), add sliced garlic and dried chilis. Fry for 60 seconds until garlic is golden. Pour sizzling tarka over the dal.
  9. Make quick cucumber raita: mix diced cucumber with plant-based yogurt, a pinch of cumin, salt, and fresh cilantro.
  10. Serve dal over basmati rice with cucumber raita on the side. Garnish with fresh cilantro and lemon wedges.

Tips & Variations

  • Red lentils cook faster and break down more completely than brown or green lentils, creating the silky, thick consistency that defines this dal. No soaking required.
  • The tarka (tempering) is not optional. The sizzling oil infused with cumin, garlic, and chili is poured over at the end and transforms the flavor from good to exceptional.
  • Add 100g of baby spinach in the last 5 minutes of cooking for extra iron and nutrients.
  • Dal thickens significantly as it cools. Add a splash of water when reheating.
  • This recipe makes great meal prep. The dal keeps in the fridge for 5 days and freezes well for up to 3 months.

Frequently Asked Questions

What is the difference between masoor dal and other lentils?

Masoor dal refers to split red lentils. They cook in 20-25 minutes without soaking and completely dissolve into a silky, creamy consistency. Whole green or brown lentils hold their shape better and take 35-45 minutes to cook.

Is dal good for weight loss?

Yes. Dal is high in plant-based protein and fiber, both of which promote satiety. It is low in fat and has a moderate glycemic impact when paired with rice or bread. The fiber also supports gut health.

Can I make this recipe in an Instant Pot?

Yes. Saute onion, garlic, and ginger in the Instant Pot. Add all remaining dal ingredients. Cook on high pressure for 10 minutes. Natural release for 10 minutes. Prepare tarka separately and pour over.

What is a tarka?

Tarka (also spelled tadka or chaunk) is a tempering technique in South Asian cooking. Whole or ground spices are fried briefly in hot oil or ghee to release their aromatic compounds, then poured over the dish. It adds incredible depth and aroma.

Is dal a complete protein?

Lentils are high in lysine but low in methionine. Rice is high in methionine but low in lysine. Eating dal with rice creates a complementary amino acid profile that provides all essential amino acids, making it a nearly complete protein.
