Ingredients

  • 500g ground turkey, 93% lean
  • 350g whole wheat penne, dry
  • 1 can (800g) crushed tomatoes
  • 0.5 cup dry white wine (optional)
  • 1 medium yellow onion, finely diced
  • 2 stalks celery, finely diced
  • 2 medium carrots, finely diced
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.5 tsp sea salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes
  • Fresh basil for garnish
  • Parmesan cheese for serving (optional)

Instructions

  1. Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.
  2. Add onion, celery, and carrots (the soffritto). Cook for 8 minutes, stirring occasionally, until vegetables are very soft and beginning to sweeten.
  3. Add minced garlic and cook for 1 minute.
  4. Increase heat to medium-high. Add ground turkey. Break apart and cook for 7 minutes until thoroughly browned and any liquid has evaporated.
  5. Add tomato paste and stir to coat the meat. Cook for 2 minutes until it darkens slightly.
  6. Add white wine if using and stir to deglaze the pot. Cook for 2 minutes until absorbed.
  7. Pour in crushed tomatoes, basil, oregano, thyme, salt, black pepper, and red pepper flakes. Stir well.
  8. Bring to a simmer, reduce heat to low, and cook uncovered for 25-30 minutes, stirring occasionally, until sauce thickens.
  9. Meanwhile, cook whole wheat penne in well-salted boiling water according to package directions until al dente. Reserve 0.5 cup pasta water. Drain.
  10. Toss drained pasta with the bolognese sauce, adding a splash of pasta water if needed to loosen the sauce.
  11. Serve immediately with fresh basil and Parmesan if desired.

Tips & Variations

  • The longer the bolognese simmers, the better it tastes. An extra 15-20 minutes of cooking develops deeper flavor.
  • A milk or coconut milk splash (2-3 tbsp) added at the end is a traditional Bolognese trick to mellow acidity.
  • Ground chicken or a beef-turkey blend works equally well.
  • The sauce stores for 5 days in the fridge and freezes for 3 months; excellent for batch cooking.
  • For extra richness without extra fat, stir in 1 tbsp ghee at the very end.

Frequently Asked Questions

Is whole wheat pasta better for muscle building than regular pasta?

Whole wheat pasta has more fiber and a lower glycemic index, leading to sustained energy release. For muscle building, both work well as long as you hit your overall calorie and protein targets.

Why cook turkey bolognese for so long if the turkey is already browned?

The extended simmer develops depth of flavor and breaks down the tomatoes into a richer sauce. It also allows the soffritto vegetables to fully integrate, transforming the sauce.

Can I make turkey bolognese in a slow cooker?

Yes. Brown the turkey and soffritto first, then transfer everything to a slow cooker and cook on low for 6-8 hours. The result is even richer.

How do I make bolognese less acidic?

A small pinch of sugar (or a splash of milk as traditional Bolognese uses) neutralizes excess tomato acidity. Cooking longer also reduces acidity naturally.
