Saag Paneer is one of the most beloved vegetarian dishes in North Indian cuisine -- a velvety, verdant curry made from pureed spinach (saag) and cubes of fresh Indian cheese (paneer) that has become an international ambassador for the richness of Indian vegetarian cooking. The creamy green sauce, spiced with ginger, garlic, garam masala, and fenugreek, clings to each golden-fried cube of paneer in a way that is simultaneously light and deeply satisfying. This recipe is gluten-free, vegetarian, and delivers 25g of protein per serving thanks to the protein powerhouse pairing of paneer and spinach.

Ingredients

Paneer

  • 400g paneer, cut into 2cm cubes
  • 2 tbsp vegetable oil (for frying paneer)
  • 1/2 tsp turmeric (for paneer)

Saag Curry Base

  • 800g fresh baby spinach (or 2 bags frozen spinach, thawed and squeezed dry)
  • 2 tbsp ghee or vegetable oil
  • 1 large onion, finely diced
  • 6 garlic cloves, minced
  • 2cm fresh ginger, grated
  • 2 green chilies, finely minced
  • 1 tsp cumin seeds
  • 1 medium tomato, diced
  • 1 tsp turmeric
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 tsp cumin powder
  • 1 tsp salt
  • 1/4 cup heavy cream or coconut cream (optional, for richness)
  • 1 tbsp dried fenugreek leaves (kasuri methi) -- highly recommended

Instructions

  1. Blanch the spinach: bring a large pot of water to a boil. Add fresh spinach and blanch for exactly 2 minutes. Transfer immediately to ice water to stop cooking and preserve the bright green color. Drain and squeeze out excess water thoroughly.
  2. Blend the spinach: transfer blanched spinach to a blender. Blend to a coarse-smooth puree -- not completely smooth, some texture is nice. Set aside.
  3. Fry the paneer: heat 2 tbsp oil in a large skillet over medium-high heat. Add paneer cubes tossed with turmeric. Fry for 2-3 minutes per side until golden on all sides. Remove and set aside (soak in warm salted water for 10 minutes for even softer paneer).
  4. Heat ghee in the same pan over medium heat. Add cumin seeds and let sizzle for 30 seconds.
  5. Add diced onion and cook for 8 minutes until deep golden, stirring frequently.
  6. Add garlic, ginger, and green chilies. Cook for 2 minutes until fragrant.
  7. Add diced tomato and cook for 5 minutes, pressing with the back of a spoon, until it breaks down into a paste.
  8. Add turmeric, coriander powder, cumin powder, and 1/2 tsp garam masala. Stir for 1 minute.
  9. Add the spinach puree. Stir to combine with the spiced tomato base. Add 1/4 cup water if the mixture is too thick.
  10. Simmer over medium-low heat for 8 minutes.
  11. Gently fold in the fried paneer cubes. Stir carefully to not break them.
  12. Add cream (if using) and kasuri methi. Crush the dried fenugreek between your palms before adding -- this releases its aroma.
  13. Add remaining 1/2 tsp garam masala. Simmer for 3 more minutes.
  14. Taste and adjust salt. Serve with steamed basmati rice or roti.

Tips & Variations

  • Ice water shock preserves color: Immediately plunging blanched spinach into ice water stops the cooking and locks in that vibrant green color. This is what separates restaurant-quality saag from dull, olive-green home versions.
  • Soak fried paneer in warm water: This optional step keeps the paneer incredibly soft and prevents it from becoming rubbery. Just 10 minutes in warm salted water transforms the texture.
  • Kasuri methi is essential: Dried fenugreek leaves (kasuri methi) add a distinctive, slightly bitter herbal note that is the secret of great saag paneer. Find it at any Indian grocery store.
  • Fresh vs frozen spinach: Fresh baby spinach produces the most vibrant color and flavor. Frozen spinach works well and saves time -- thaw completely and squeeze out all water before using.
  • Tofu substitution: Replace paneer with firm tofu, fried until golden, for a fully vegan version that is equally satisfying.

Frequently Asked Questions

What is the difference between saag paneer and palak paneer?

"Palak" specifically means spinach in Hindi and Punjabi, while "saag" is a broader term for leafy greens and can include mustard leaves, fenugreek leaves, or a mixture of greens. Palak paneer is made purely from spinach, while saag paneer may use mixed greens. In most restaurants, the two names are used interchangeably.

What is paneer?

Paneer is fresh Indian cheese made by curdling hot whole milk with an acid (lemon juice or vinegar). It has a firm, mild, slightly milky flavor and does not melt when cooked -- instead it browns and develops a slight crust. It is the most commonly used cheese in Indian vegetarian cooking.

Can I make saag paneer with frozen spinach?

Yes, frozen spinach works well and saves significant prep time. Thaw it completely and squeeze out as much water as possible -- excess water will thin your curry and make it watery. Use about 600g of frozen spinach (it reduces significantly when thawed).

Is saag paneer gluten-free?

Yes, saag paneer made with this recipe is naturally gluten-free. All ingredients -- spinach, paneer, ghee, and spices -- are gluten-free. Always check your garam masala blend and any store-bought paneer for hidden gluten additives.

How do I keep the saag paneer bright green?

The ice water shock after blanching is the key. Never overcook the spinach, and add it to the spiced tomato base only briefly before serving. Adding a pinch of sugar and a squeeze of lemon juice also helps preserve the green.
