Scallops with cauliflower puree is a French-inspired restaurant dish you can recreate at home in under 30 minutes. Large sea scallops are seared in a blazing-hot pan until caramelized on the outside and just translucent at the center, then served over a silky, buttery cauliflower puree. Each serving has 23g of protein with just 15g of carbs, fitting perfectly within gluten-free, high-protein, low-carb eating patterns.

Ingredients

Cauliflower Puree

  • 1 medium head cauliflower (about 800g), cut into florets
  • 2 tbsp unsalted butter
  • 2 tbsp heavy cream or coconut cream
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1 clove garlic, minced

Pan-Seared Scallops

  • 600g large sea scallops (about 16 pieces), patted dry
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp neutral oil (avocado or grapeseed)
  • 1 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme leaves
  • 1 tbsp lemon juice
  • Micro greens or fresh pea shoots for garnish (optional)

Instructions

  1. Steam cauliflower florets for 12-15 minutes until completely soft and easily pierced with a fork.
  2. Transfer steamed cauliflower to a blender or food processor. Add butter, heavy cream, garlic, salt, and white pepper. Blend until very smooth, about 2 minutes. Taste and adjust seasoning. Keep warm.
  3. Remove the small side muscle from each scallop if attached. Pat scallops completely dry with paper towels — this is the most important step.
  4. Season scallops generously on both sides with salt and black pepper.
  5. Heat neutral oil in a large stainless steel or cast-iron skillet over very high heat until just smoking.
  6. Add scallops in a single layer, leaving space between each. Cook for exactly 90 seconds without moving.
  7. Flip each scallop and add butter, garlic, and thyme to the pan. Baste scallops with the foaming butter for 60-90 more seconds. They should have a deep golden crust and be just set in the center.
  8. Squeeze lemon juice over the scallops immediately.
  9. Spoon cauliflower puree onto each plate. Top with seared scallops (3-4 per serving). Drizzle with the pan butter. Garnish with micro greens if using.

Tips & Variations

  • The single most important rule: scallops must be completely dry before searing. Any surface moisture creates steam instead of a crust.
  • Use a stainless steel or cast-iron pan, never non-stick; you need high heat that non-stick can't handle safely.
  • Do not move scallops during cooking. Let them release naturally from the pan; if they stick, they need more time.
  • For a dairy-free version, use olive oil instead of butter and coconut cream in the puree.
  • Add crispy pancetta or prosciutto alongside for an indulgent restaurant-style upgrade.

Frequently Asked Questions

How do you get a good sear on scallops?

Three essentials: completely dry scallops, a ripping-hot pan, and no movement during cooking. Wet scallops steam rather than sear. Once placed in the pan, don't touch them for 90 seconds.

How do I know when scallops are cooked?

Scallops are done when they release from the pan easily and have a deep golden crust on the seared side. The center should be slightly translucent and just firm to the touch — they continue cooking slightly off the heat.

Can I make the cauliflower puree ahead of time?

Yes. Make up to 2 days ahead and refrigerate. Reheat gently in a saucepan over low heat with a splash of cream, stirring until smooth.

Are scallops high in protein?

Yes. Large sea scallops contain about 23g protein per 100g with very little fat, making them one of the leanest high-protein seafoods available.

What can I substitute for heavy cream in the cauliflower puree?

Coconut cream is an excellent dairy-free substitute. Regular milk or chicken broth also work for a lighter version.
