Mexican Birria Taco Bowl brings the viral street-food sensation home in an easy, bowl-format version. Slow-braised beef in a rich, smoky chile consomme is served over rice with pickled red onions, cilantro, and a side of the braising broth for dipping. This gluten-free, dairy-free bowl delivers 45g of protein from tender braised beef chuck that falls apart with a fork. The consomme is the star of the dish and doubles as a deeply satisfying dipping sauce.

Ingredients

Birria Beef

  • 600g beef chuck, cut into large cubes
  • 3 dried guajillo chiles, stems and seeds removed
  • 2 dried ancho chiles, stems and seeds removed
  • 1 chipotle pepper in adobo sauce
  • 4 cloves garlic
  • 1/2 white onion, roughly chopped
  • 1 can (400ml) diced tomatoes
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/4 tsp ground cinnamon
  • 2 bay leaves
  • 500ml beef broth
  • Salt and pepper to taste
  • 1 tbsp avocado oil

Bowl

  • 2 cups cooked white rice
  • 1/2 red onion, very thinly sliced (quick-pickled in lime juice and salt for 15 min)
  • 1/2 cup fresh cilantro
  • 2 limes, cut into wedges
  • 1 avocado, sliced
  • 1 jalapeño, sliced (optional)

Instructions

  1. Toast dried guajillo and ancho chiles in a dry skillet over medium heat for 30 seconds per side until fragrant. Transfer to a bowl of boiling water and soak for 15 minutes until softened.
  2. Drain chiles. Blend with garlic, onion, diced tomatoes, chipotle pepper, cumin, oregano, paprika, and cinnamon until smooth.
  3. Season beef cubes generously with salt and pepper. Heat avocado oil in a large pot or Dutch oven over high heat. Sear beef for 3 minutes per side until deeply browned. Work in batches to avoid steaming.
  4. Pour the chile sauce over the seared beef. Add beef broth and bay leaves. Stir to combine.
  5. Bring to a boil, then reduce heat to low. Cover and braise for 2.5 to 3 hours until beef is fall-apart tender.
  6. Remove beef and shred with two forks. Return to the consomme. Taste and adjust salt.
  7. Quick-pickle red onion: combine thinly sliced red onion with lime juice and a pinch of salt. Let sit for 15 minutes.
  8. Divide rice between bowls. Top generously with shredded birria beef.
  9. Ladle some consomme over the beef and into a small cup alongside for dipping.
  10. Top with pickled red onion, fresh cilantro, sliced avocado, and jalapeño. Serve with lime wedges.

Tips & Variations

  • Dried guajillo and ancho chiles are the non-negotiable base of authentic birria. Find them at any Latin grocery store or online. Do not substitute with just chili powder.
  • For a shortcut, use an Instant Pot or pressure cooker. Cook on high pressure for 55 minutes instead of braising on the stovetop.
  • Traditional birria uses goat meat (birria de chivo). Beef chuck is the most popular home version. Lamb shoulder also works beautifully.
  • Leftover birria and consomme freeze exceptionally well for up to 3 months.
  • For crispy quesabirria tacos, dip corn tortillas in the consomme fat, add cheese and beef, and griddle until crispy. This version skips the tortillas for a lower-carb bowl format.

Frequently Asked Questions

What is birria?

Birria is a traditional Mexican stew from Jalisco, originally made with goat meat braised in a complex chile-spice marinade (adobo). It is now made with beef, lamb, or chicken in many regions. The cooking liquid (consomme) is served alongside for dipping.

How long does birria need to cook?

On the stovetop, 2.5-3 hours for beef chuck. In an Instant Pot, 55 minutes on high pressure. In a slow cooker, 8 hours on low or 5 hours on high.

Is birria spicy?

The base recipe with guajillo and ancho chiles is mildly spicy. Chipotle adds smokiness and mild heat. For a spicier version, add 1 dried chile de arbol.

What is consomme in birria?

The consomme is the braising liquid from the birria, which is served warm on the side as a dipping broth. It is deeply flavorful from the chiles, spices, and beef fat. Skim excess fat from the surface before serving.

Can I make birria ahead of time?

Yes. Birria tastes better the next day as the flavors deepen overnight. Make up to 3 days ahead and reheat gently. This is an ideal Sunday meal-prep recipe.
