Ingredients

Base

  • 2 cups cooked jasmine rice, day-old (or chilled)
  • 1 cup kimchi, roughly chopped (about 150g)
  • 2 tbsp kimchi brine

Protein

  • 200g ground pork (or turkey)
  • 2 large eggs

Aromatics and Sauce

  • 3 cloves garlic, minced
  • 1 tsp sesame oil
  • 1 tbsp gochujang (Korean chili paste, check label for gluten-free)
  • 1 tbsp coconut aminos (or tamari)
  • 1 tbsp avocado oil

Toppings

  • 2 green onions, sliced
  • 1 tsp sesame seeds
  • 1/2 sheet nori, cut into strips (optional)

Instructions

  1. Heat avocado oil in a large skillet or wok over high heat until shimmering, about 1 minute.
  2. Add ground pork and cook, breaking it up, for 4 minutes until browned and cooked through.
  3. Push pork to the side and add minced garlic. Cook for 30 seconds until fragrant.
  4. Add chopped kimchi and kimchi brine to the pan. Stir-fry everything together for 2 minutes.
  5. Add the cold rice to the pan. Press it down and let it sit undisturbed for 1 minute to develop a slight crust.
  6. Stir-fry the rice, breaking up any clumps, for 3 minutes until heated through and slightly crispy.
  7. Add gochujang and coconut aminos. Toss everything to combine and cook for 1 more minute.
  8. Drizzle with sesame oil and remove from heat.
  9. In a separate small pan, fry eggs sunny-side up over medium heat for 2-3 minutes until whites are set but yolks are still runny.
  10. Divide kimchi fried rice into bowls. Top each with a fried egg, sliced green onions, sesame seeds, and nori strips.

Tips & Variations

  • Day-old rice is essential for non-mushy fried rice. Freshly cooked rice has too much steam. Spread hot rice on a baking sheet and refrigerate for at least 2 hours, or use leftover rice from the previous day.
  • For a lower-calorie version, substitute cauliflower rice for half the jasmine rice to reduce carbs by about 80g per serving.
  • Make it vegetarian by swapping pork for firm tofu, crumbled and pan-fried until golden before adding to the wok.
  • Store leftovers (without the egg) in an airtight container for up to 3 days. Reheat in a hot pan with a splash of water.
  • Adjust gochujang to taste. Start with 1/2 tbsp for mild heat, up to 2 tbsp for very spicy.

Frequently Asked Questions

Is kimchi fried rice gluten-free?

It can be if you use gluten-free kimchi (check the label for wheat or fish sauce with wheat) and replace soy sauce with coconut aminos or tamari. Most traditional kimchi is made without wheat, but always verify.

Can I use freshly cooked rice for fried rice?

Fresh rice is too moist and will steam rather than fry, resulting in a mushy texture. Use rice that has been cooked and refrigerated for at least 2 hours, preferably overnight.

What protein can I substitute for pork?

Ground turkey, diced chicken thigh, or extra-firm tofu all work well. For a fully plant-based version, use tofu and add an extra tablespoon of gochujang for depth.

How spicy is kimchi fried rice?

Spice level depends on your kimchi and how much gochujang you use. Start with less and adjust up. Kimchi itself ranges from mild to very spicy depending on the brand.

Is this good for meal prep?

Yes. The fried rice base stores well for 3 days. Simply reheat in a skillet and add a freshly fried egg when serving.
