Chicken Biryani High-Protein Recipe
Chicken Biryani is widely considered the most celebrated rice dish on earth -- a fragrant, layered masterpiece of basmati rice and spiced chicken that originated in the Mughal courts and has been perfected across the Indian subcontinent over centuries. This high-protein version uses extra chicken and reduces the rice ratio to maximize protein while keeping the dish's soul intact: the aromatic spice blend, the golden fried onions (birista), the saffron-milk glaze, and the "dum" steam-sealing technique that creates its legendary fragrance. Each serving delivers 48g of protein from 700g of chicken.
Ingredients
Chicken Marinade
- 700g chicken thighs and drumsticks, skin-on (bone-in preferred)
- 1 cup full-fat yogurt
- 2 tbsp ginger-garlic paste (or 6 garlic cloves + 3cm ginger, blended)
- 1.5 tsp salt
- 1 tsp red chili powder
- 1 tsp garam masala
- 1/2 tsp turmeric
- 1 tsp ground cumin
- 2 tbsp fried onions (birista) -- from the preparation below
- 2 tbsp fresh mint leaves, chopped
- 2 tbsp fresh cilantro, chopped
Fried Onions (Birista)
- 3 large onions, thinly sliced
- 4 tbsp vegetable oil or ghee (for frying)
Rice
- 350g aged basmati rice, soaked in cold water for 30 minutes
- Water for parboiling
- 1 bay leaf, 4 cardamom pods, 4 cloves, 1 stick cinnamon, 1 tsp salt (for parboiling)
Assembly
- 3 tbsp ghee or vegetable oil
- 4 tbsp warm milk
- Large pinch of saffron strands, soaked in warm milk
- 2 tbsp fresh mint leaves
- 2 tbsp fresh cilantro
Instructions
- Make the birista (fried onions): heat oil in a wide pan over medium heat. Add thinly sliced onions and fry for 20-25 minutes, stirring frequently, until deep golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Reserve the flavored oil.
- Marinate the chicken: combine all marinade ingredients including 2 tbsp of the birista. Mix well to coat every piece. Cover and refrigerate for at least 2 hours, ideally overnight.
- Parboil the rice: bring a large pot of water to a boil with bay leaf, cardamom, cloves, cinnamon stick, and salt. Add soaked and drained basmati rice. Parboil for exactly 6 minutes -- the rice should be 70% cooked (slightly firm in the center). Drain immediately and spread out to cool.
- Cook the marinated chicken: heat the reserved onion oil in a heavy-bottomed pot over high heat. Add marinated chicken pieces and sear for 3 minutes per side until golden. Add 1/4 cup water, reduce heat, cover, and cook for 15 minutes.
- Layer the biryani: spread the partially cooked chicken evenly in the pot. Layer 50% of the parboiled rice over the chicken. Scatter half the remaining birista, fresh mint, and cilantro over the rice. Add the remaining rice as a second layer.
- Drizzle ghee over the top rice layer. Pour saffron milk evenly over the surface. Scatter remaining birista and herbs on top.
- Seal the pot: cover tightly with foil, then place the lid on top. Alternatively, seal with dough around the lid. This creates the "dum" (steam pressure) that finishes the biryani.
- Place the sealed pot over very low heat (or use a tawa/griddle underneath to diffuse heat). Cook on dum for 25 minutes.
- Remove from heat and let rest sealed for 10 minutes before opening.
- Open the lid and gently fold the layers with a wide spatula, bringing some rice from the bottom up. Serve with raita (yogurt-cucumber sauce) and sliced onions.
Tips & Variations
- Birista is the foundation of great biryani: Do not rush the onion frying. They need 20-25 minutes over medium heat to go from raw to golden to deeply caramelized and crispy. This is where biryani gets its complex sweetness.
- Parboiling to 70% is critical: Fully cooked rice in biryani will turn mushy under dum. The parboiling should leave the center slightly firm -- it finishes cooking in the sealed pot with the steam from the chicken.
- Heavy pot matters: Use a thick-bottomed Dutch oven or the traditional biryani pot (handis). Thin pots cause the bottom layer to burn.
- The dum technique: "Dum" means to cook in steam. The sealed pot traps steam from the chicken and spices, which gently cooks the rice while infusing every grain with flavor. This is the secret to restaurant-quality biryani at home.
- Bone-in chicken is superior: The marrow from bone-in chicken enriches the steam and gives biryani its characteristic depth. Boneless chicken is a shortcut that produces noticeably inferior results.

Frequently Asked Questions
What is the "dum" technique in biryani?
Dum (also spelled "dam") comes from the Persian word for breath. It is a slow-cooking method where the pot is completely sealed and placed over very low heat. The trapped steam circulates inside, gently cooking the rice while infusing it with the flavors of the spiced chicken below. This creates the moist, aromatic texture that defines great biryani.
What makes biryani different from pulao?
Biryani is a layered dish where partially cooked rice and marinated meat are layered and finished together under sealed steam (dum). Pulao is a one-pot dish where rice and aromatics are cooked together from the start. Biryani has a more complex, layered flavor profile; pulao is simpler and faster.
Can I use basmati rice from any brand?
Aged basmati rice (the label usually says "aged" or the bag is 1+ year old) performs significantly better in biryani. Aged rice has lower moisture content, stays firmer when parboiled, and separates into beautiful long grains rather than clumping. Look for Indian or Pakistani basmati brands.
Is biryani gluten-free?
Traditional biryani with rice, chicken, whole spices, and yogurt is naturally gluten-free. Check your garam masala and any store-bought spice blends, as some contain gluten additives. Also verify that your chicken stock or any pre-made pastes are gluten-free.
Can I make biryani in an Instant Pot?
Yes. Use the saute function to fry onions and sear chicken. Add parboiled rice over chicken, pour saffron milk, seal, and pressure cook on low pressure for 6 minutes with 10 minutes natural release. The texture will be slightly different but still excellent.
