Crispy Kale Chips Sea Salt Recipe
Crispy sea salt kale chips are one of the best low-carb, keto-friendly snacks you can make at home. Baked until perfectly crispy and light, they shatter on contact and deliver a satisfying crunch without the guilt. At only 84 calories per serving with 3g of plant-based protein, these kale chips are proof that healthy snacking does not have to be boring.
Ingredients
- 1 large bunch curly kale (about 250g), stems removed and torn into 3-inch pieces
- 2 tbsp olive oil
- 0.5 tsp flaky sea salt
- 0.25 tsp black pepper
- 0.5 tsp garlic powder (optional)
- 0.25 tsp nutritional yeast (optional, adds cheesy flavor)
Instructions
- Preheat oven to 300°F (150°C). Line two large baking sheets with parchment paper.
- Remove kale leaves from the thick center stems by holding the stem at the base and pulling upward. Tear into large pieces.
- Wash kale pieces and dry very thoroughly. Any moisture will make them steam instead of crisp. A salad spinner works best.
- Transfer dry kale to a large bowl. Drizzle with olive oil.
- Massage the oil into each kale leaf with your hands until all surfaces are lightly coated.
- Spread kale in a single layer on the prepared baking sheets. Do not overlap.
- Sprinkle evenly with sea salt, pepper, garlic powder, and nutritional yeast if using.
- Bake at 300°F for 20 minutes. Check at 15 minutes. The chips should be dry, crispy, and lightly browned at the edges.
- Remove from oven and allow to cool on the baking sheets for 5 minutes. They crisp up more as they cool.
- Serve immediately. Store in an airtight container at room temperature for up to 2 days.
Tips & Variations
- Low and slow is the key. 300°F prevents burning while thoroughly dehydrating the kale.
- Completely dry kale before oiling. Even a few drops of water prevent crispiness.
- Try topping with smoked paprika and cayenne for a smoky kick, or sesame oil and tamari for an Asian twist.
- Kale chips are best eaten within a day or two. Humidity makes them lose their crispiness quickly.
- For perfectly even chips, use a pastry brush to apply a thin, even coat of oil to each piece.

Frequently Asked Questions
Why are my kale chips not crispy?
The most common cause is moisture. Ensure the kale is completely dry before oiling it, and bake at a low temperature without overlapping the pieces.
What type of kale makes the best chips?
Curly kale produces the best chips. It has a textured surface that crisps up beautifully. Lacinato (dinosaur) kale also works but has a denser texture.
Are kale chips keto-friendly?
Yes. With only 1g net carb per serving and minimal calories, kale chips are one of the most keto-friendly snacks you can make.
Can I make kale chips in an air fryer?
Yes. Air fry at 275°F for 8-10 minutes in a single layer. Watch closely as air fryer temperatures vary and they can burn quickly.
