Peruvian Ceviche with Tiger's Milk Recipe
Peruvian Ceviche with Tiger's Milk (leche de tigre) is arguably the most celebrated dish in all of Peruvian cuisine -- fresh fish "cooked" in an electrifying bath of lime juice, aji amarillo, and ginger that Peruvians have perfected over centuries. The tiger's milk (the citrusy, spicy curing liquid) is so revered it is served as a shot alongside the ceviche. This dish is naturally keto, gluten-free, dairy-free, and delivers 31g of protein per serving with essentially zero cooking required.
Ingredients
Ceviche
- 600g fresh white fish (sea bass, flounder, or halibut), cut into 2cm cubes
- 1/2 red onion, very thinly sliced into half-moons
- 1 aji amarillo pepper, seeded and finely minced (or 1 tbsp aji amarillo paste)
- 1/2 cup fresh cilantro leaves, roughly torn
- Salt to taste
Tiger's Milk (Leche de Tigre)
- 3/4 cup freshly squeezed lime juice (about 10-12 limes)
- 1 celery stalk, roughly chopped
- 2 garlic cloves
- 2cm piece fresh ginger, peeled
- 1 tsp aji amarillo paste
- 1 tsp salt
- 1 tsp sugar
- 50g fish trimmings or an additional 50g of the same fish
To Serve
- 1 cup cooked corn kernels (choclo or sweet corn)
- 2 medium sweet potatoes, boiled and sliced into rounds
- Extra cilantro sprigs
- Thin corn tortilla chips (optional)
Instructions
- Make the tiger's milk first: blend lime juice, celery, garlic, ginger, aji amarillo paste, salt, sugar, and 50g of raw fish trimmings until smooth. Strain through a fine mesh sieve and discard solids. Refrigerate immediately.
- Slice the red onion very thinly and soak in cold salted water for 10 minutes to remove sharpness. Drain and pat dry.
- Cut the fish into 2cm cubes. Use the freshest fish possible -- this is the most critical factor. Season lightly with salt and let sit for 2 minutes.
- Pour the cold tiger's milk over the fish. Toss gently to coat every piece. The lime juice will begin "cooking" the fish immediately.
- Add sliced red onion and minced aji amarillo. Toss gently.
- Marinate for exactly 3-5 minutes for tender, barely-cured fish. If you prefer firmer, more traditional texture, marinate for up to 10 minutes. Do not exceed 10 minutes or the texture becomes rubbery.
- Fold in fresh cilantro leaves just before serving.
- Taste and adjust with salt. The ceviche should be bright, tangy, and mildly spicy.
- Plate immediately -- ceviche waits for no one. Arrange on a chilled plate with corn, sweet potato rounds, and extra cilantro.
- Serve the leftover tiger's milk in a small glass alongside as a shooter -- a cherished Peruvian tradition.
Tips & Variations
- Freshness is non-negotiable: Ceviche uses raw fish "cooked" by acid. Use sushi-grade fish, purchased the same day. Tell your fishmonger you're making ceviche.
- Chill everything: Cold fish, cold bowl, cold tiger's milk. Temperature control keeps the texture perfect and is important for food safety.
- Do not over-marinate: 3-5 minutes gives you silky, tender fish. Over 10 minutes and the texture becomes chalky. Traditional Peruvian ceviche is meant to be "tiradito-style" -- barely cured.
- Choclo vs sweet corn: Choclo (Peruvian giant corn) has a starchier, chewier texture that contrasts beautifully with the acidic fish. Sweet corn is a fine substitute but less authentic.
- Classic variations: Add 1/4 cup diced mango for a tropical twist, or substitute shrimp for half the fish for a mixed ceviche.

Frequently Asked Questions
Is ceviche safe to eat without cooking?
Peruvian ceviche relies on lime juice to denature the proteins in the fish, which changes its texture to resemble cooked fish. However, the acid does not kill all pathogens as heat does. Use sushi-grade fish (frozen at -20°C for 7 days per FDA guidelines) to minimize risk, and consume immediately after marinating.
What is tiger's milk and why is it called that?
Tiger's milk (leche de tigre) is the citrusy, spicy curing marinade that "cooks" the ceviche. It gets its name from its claimed aphrodisiac properties and energizing kick. In Peru, it is sipped as a hangover cure and served as a cocktail base.
What fish is best for ceviche?
Firm, white-fleshed fish works best. Sea bass (corvina) is the classic Peruvian choice. Halibut, flounder, snapper, and tilapia also work well. Avoid oily fish like salmon or tuna, which become mushy in acid.
Can I make ceviche ahead of time?
No. Ceviche must be made and consumed immediately. The longer it sits in the lime juice, the tougher and chalkier the fish becomes. Prepare the tiger's milk up to 4 hours ahead, but only add the fish 3-10 minutes before serving.
Is Peruvian ceviche keto-friendly?
Yes, absolutely. The fish and tiger's milk are essentially zero-carb. If you skip the sweet potato and corn accompaniments, total carbs drop to under 5g per serving, making it perfect for strict keto.
