Scientific / Technical Definition
Deep frying involves cooking food by immersing it in oil at temperatures typically between 350°F and 375°F (175°C to 190°C). The high temperature of the oil causes the surface of the food to dehydrate and form a crispy crust while the inside is cooked by the transfer of heat through the crust from the oil. This method changes the chemical composition of the food, making it more calorically dense due to the oil absorption.
