Carbohydrates are organic compounds consisting of carbon, hydrogen, and oxygen atoms, typically with a hydrogen:oxygen atom ratio of 2:1. They are classified into simple carbohydrates (sugars) and complex carbohydrates (starches and fibers) based on their chemical structure.
